Before You Start

Heat a grill pan over medium high, pat the pineapple spears dry, and juice the lime so the fruit sears instead of steaming.

How To Make It
  1. Heat a grill pan over medium high heat, about 2 minutes, until a drop of water dances and vanishes.
  2. Lay the pineapple spears down and grill, about 3 minutes a side, until dark grill lines form and the edges caramelize.
  3. Move them to a plate and squeeze the lime over the top.
  4. Scatter the torn mint and a pinch of cinnamon and eat them warm.
Fix It: If no grill lines form, the pan was not hot enough; let it heat another minute before the next batch.
