What You Need

Before You Start

Pat the chicken dry, cook the vermicelli per its package, shred the cabbage, chop the bok choy, and rinse the herbs so the bowl comes together fast.

How To Make It
  1. Season the chicken and sear it over medium high, 5 to 6 minutes a side, until golden and it reaches 165°F in the center with no pink, then rest it a few minutes and slice.

  2. Add the cabbage to the same pan with a splash of water and cook, 6 to 7 minutes, until softened and lightly golden.
  3. Add the bok choy and lemongrass and cook, 2 to 3 minutes, until the leaves wilt and the stalks are just tender.
  4. Toss the vegetables with the garlic, cilantro, mint, and a squeeze of lime off the heat.
  5. Serve the sliced chicken and vegetables over the vermicelli and finish with more lime.
Fix It: If the chicken browns before it reaches 165°F, lower the heat and cover the pan so it cooks through without drying.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
