What You Need

Before You Start

Pull the sirloin out 10 minutes ahead and pat it dry, trim the green beans, rinse the spinach, mince the garlic, and have the rice ready.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Season the sirloin, add it, and sear, turning once, 3 to 4 minutes per side, until deep brown and it reaches 145°F in the center, then rest it 3 minutes.

  3. Add the green beans to the pan and cook 4 to 5 minutes, until bright and just tender.
  4. Add the spinach and the smoked paprika, garlic, and saffron and cook, 2 to 3 minutes, until the spinach wilts and the spices smell fragrant.
  5. Slice the rested sirloin and serve it with the green beans and spinach over the cooked rice.
Fix It: If the outside browns before it reaches 145°F, lower the heat and give it another minute or two so the center catches up.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 14 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
