What You Need
Makes 1 plate Batch it

Before You Start

Drain and rinse the chickpeas, trim the green beans, dice the tomato, and rinse the spinach so everything is ready to hit the pan; warm the rice if it is cold.

How To Make It
  1. Warm the olive oil in a skillet over medium heat, about 1 minute, until it shimmers.
  2. Add the green beans and cook, stirring now and then, 6 to 7 minutes, until bright green and just tender.
  3. Add the spinach and diced tomato and cook, 2 to 3 minutes, until the spinach wilts and the tomato softens.
  4. Warm the chickpeas in the pan with the vegetables, 2 to 3 minutes, until heated through.
  5. Spoon the brown rice into a bowl, pile the chickpeas and vegetables on top, and scatter the olives.
  6. Spoon the hummus over, finish with a squeeze of lemon, and serve warm.
Fix It: If it tastes flat, a pinch of salt and a squeeze of lemon over the top wakes the whole bowl up.
