What You Need

Before You Start

Press the tofu dry and cube it, have the cooked quinoa ready, trim the green beans, rinse the spinach, mince the garlic, and chop the parsley.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Season the tofu, add it, and sear, turning to color the sides, 6 to 8 minutes, until golden and crisp, then set it aside.
  3. Add the green beans to the pan and cook, 5 to 6 minutes, until bright and just tender.
  4. Add the spinach and cook, 2 to 3 minutes, until it wilts down and turns glossy.
  5. Off the heat, dress the vegetables with the lemon, garlic, parsley, and a pinch of the smoked paprika.
  6. Serve the tofu and vegetables over the quinoa.
Fix It: If the tofu sticks to the pan, leave it another minute; it releases on its own once it browns.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
