What You Need

Before You Start

Pat the cod dry and season it with the paprika, trim the green beans, rinse the spinach, dice the cucumber, mince the garlic, and have the cooked quinoa ready.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Rub the cod with the smoked paprika, add it and sear 3 to 4 minutes a side, until it flakes easily with a fork and reaches 145°F in the center, then set it aside.

  3. Cook the green beans in the same pan 5 to 6 minutes, until bright green and just tender.
  4. Add the spinach and garlic and cook, 1 to 2 minutes, until the spinach wilts.
  5. Spoon the quinoa into a bowl, top with the cucumber, green beans, and spinach, lay the cod on top, dress with the lemon, olive oil, and parsley, and serve.
Fix It: If the cod sticks and breaks apart, let it sear undisturbed until it releases on its own, since fish lets go of the pan once a crust forms.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
