What You Need
Makes 1 plate Batch it

Before You Start

Cut the zucchini into half moons and the broccoli into even florets so they finish together.

How To Make It
  1. Whisk the miso, rice vinegar, ginger, and garlic into the water until smooth.
  2. Pour the mixture into a nonstick pan and bring it to a gentle simmer for 2 minutes.
  3. Add the broccoli and steam covered for 6 minutes until bright green and fork tender.
  4. Add the zucchini and cook for 3 minutes until just tender.
  5. Push the vegetables aside, add the shrimp, and cook for 3 minutes until pink and opaque and reaches 145°F.

  6. Toss everything together for 1 minute and top with sliced scallion.
Fix It: If the miso broth thickens too much, loosen it with a splash of water before adding the shrimp.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
