What You Need

Before You Start

Pat the sirloin dry and season it, shred the carrot, rinse the spinach, mince the garlic and grate the ginger.

How To Make It
  1. Season the beef sirloin, warm a pan over medium high, and sear 3 to 4 minutes a side, until browned outside and it reaches 145°F in the center, then set it aside.

  2. Rest the sirloin 3 minutes so the juices settle, then slice it thin against the grain.
  3. Cook the shredded carrot in the same pan 4 to 5 minutes, until just tender but still bright.
  4. Add the spinach and cook, 1 to 2 minutes, until it wilts and turns bright green.
  5. Toss the vegetables with the coconut aminos, sesame oil, garlic, ginger, and sesame seeds off the heat so the garlic does not scorch.
  6. Serve the sliced beef and vegetables over the cooked rice.
Fix It: If the beef is chewy, you likely sliced with the grain; cut across the long fibers so each bite stays tender.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 13 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
