What You Need

Before You Start

Pat the sirloin dry and season it, cut the broccoli into florets, chop the bok choy, grate the ginger and mince the garlic, and have the cooked rice ready.

How To Make It
  1. Sear the beef sirloin in a hot pan over medium high heat, 3 to 4 minutes a side, until deeply browned and it reaches 145°F in the center.

  2. Move the beef to a plate and rest 3 minutes, then slice it thin.
  3. Cook the broccoli in the same pan with a splash of water 4 to 5 minutes, until bright green and just tender.
  4. Add the bok choy and cook, 2 to 3 minutes, until the stems soften and the leaves wilt.
  5. Toss the broccoli and bok choy with the coconut aminos, ginger, garlic, sesame oil, and scallions off the heat.
  6. Serve the sliced beef and vegetables over the rice.
Fix It: If the beef comes out chewy, slice it thin against the grain, since cutting across the fibers keeps each bite tender.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 14 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
