7 oz grilled sirloin sliced over 1.5 cups garlic mushrooms and 1 cup spinach in olive oil, finished with 2 tablespoons parmesan and balsamic vinegar.

What You Need

Before You Start

Let the steak sit at room temperature 15 minutes while the grill heats.

How To Make It
  1. Heat the grill or a grill pan over medium-high heat for 5 minutes.
  2. Season the sirloin with the salt and pepper and grill 4 to 5 minutes per side until it reads 145°F, then rest it 5 minutes.

  3. Warm the olive oil in a skillet over medium-high heat and cook the mushrooms 6 minutes until browned.
  4. Add the garlic and spinach and cook 2 minutes until the spinach is wilted.
  5. Slice the steak over the vegetables, drizzle the vinegar and scatter the parmesan.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the steak is under 145°F after resting, return it to the grill 1 minute per side.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
