What You Need
Makes 1 plate Batch it

Before You Start

Wet your hands before rolling the meatballs so the mix does not stick.

How To Make It
  1. Heat the oven to 400°F and line a sheet pan with parchment.
  2. Mix the pork, egg, parmesan, basil, half the garlic and the salt, then roll 8 small meatballs.
  3. Toss the zucchini and mushrooms with the olive oil and spread them beside the meatballs.
  4. Bake 18 to 20 minutes until the meatballs are browned and read 165°F and the zucchini is tender.

  5. Warm the crushed tomato with the rest of the garlic in a small pan for 3 minutes until bubbling.
  6. Spoon the sauce over the meatballs and vegetables.
  7. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 3 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the meatballs fall apart, chill the mix 10 minutes before rolling so it firms up.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
