Before You Start
Slice the pork thin across the grain while it is cold; it cuts cleaner.
How To Make It
Toss the pork with half the sesame oil, the ginger, the garlic and the salt.
Heat a large skillet over high heat for 2 minutes, then stir-fry the pork 4 minutes until no pink remains and it reads 145°F; move it to a plate and rest it 3 minutes.

Add the rest of the sesame oil and stir-fry the napa cabbage 3 minutes until tender-crisp, then add the spinach for 1 minute until wilted.
Return the pork, add the rice vinegar and toss 1 minute until coated.
Scatter the scallion and sesame seeds over the top.
To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the scallion separate, refrigerate up to 3 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the pan cools and the cabbage steams, cook in two batches so each piece touches the hot pan.

Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
Cook for about 10 minutes, shaking the basket halfway, until cooked through and lightly crisp.
Let it rest a minute, then finish and plate the dish as written in the steps above.

Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
