What You Need
Makes 1 plate Batch it

Before You Start

Press a thumb dent into the center of the patty so it stays flat on the grill.

How To Make It
  1. Warm half the oil in a skillet over medium-high heat and cook the mushrooms 6 minutes until browned; set them aside.
  2. Heat the grill or a grill pan over medium-high heat for 5 minutes.
  3. Mix the beef, oregano, onion and salt, shape one patty and grill 5 to 6 minutes per side until it reads 160°F.

  4. Warm the rest of the oil in the same skillet and cook the spinach 2 minutes until wilted.
  5. Set the burger over the spinach and mushrooms, squeeze the lemon over and scatter the feta.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the patty sticks, let it cook 1 more minute; it releases once it is browned.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
