6 oz roasted beef kofta with cumin, paprika and parsley over 1 cup spinach and 1 cup roasted cauliflower, with 2 tablespoons mint yogurt.

What You Need
Makes 1 plate Batch it

Before You Start

Chill the shaped kofta while the oven heats so they hold their shape.

How To Make It
  1. Heat the oven to 425°F and line a sheet pan.
  2. Mix the beef, cumin, paprika, parsley, garlic and salt and shape 4 small logs.
  3. Toss the cauliflower with the oil and spread it beside the kofta.
  4. Roast 15 to 18 minutes until the kofta are browned and read 160°F and the cauliflower is tender; spoon off any fat on the pan, then wilt the spinach on the hot pan for 2 minutes until soft.

  5. Stir the mint into the yogurt and spoon it beside the kofta.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the mint yogurt separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the kofta crack, press them back together and roast seam side down.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
