What You Need
Makes 1 plate Batch it

Before You Start

Pound the thick end of the breast to an even 3/4 inch so it bakes evenly.

How To Make It
  1. Heat the oven to 425°F.
  2. Toss the zucchini, mushrooms and garlic with half the oil and spread them on a sheet pan.
  3. Brush the chicken with the rest of the oil, then press on the parmesan, basil, salt and pepper.
  4. Bake 20 to 22 minutes until the crust is golden and the chicken reads 165°F.

  5. Rest the chicken 5 minutes, then slice it over the vegetables.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the crust browns before the chicken reaches 165°F, lay a sheet of foil loosely over it.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
