What You Need
Makes 1 plate Batch it

Before You Start

Use an oven-safe skillet so the frittata goes straight from the stove to the oven.

How To Make It
  1. Heat the oven to 375°F.
  2. Cook the bacon in an oven-safe 8-inch skillet over medium heat for 6 minutes until crisp, then spoon off all but 1 teaspoon of fat.
  3. Cook the mushrooms in the bacon fat for 5 minutes until browned, then add the spinach and cook 1 minute until wilted.
  4. Whisk the eggs, cream, parmesan and pepper and pour it over the vegetables.
  5. Bake 14 to 16 minutes until the center is set and a knife comes out clean, 160°F.

  6. Cut the frittata into wedges.
  7. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 3 days, then reheat it covered for 1 to 2 minutes until steaming and 165°F in the center.

Fix It: If the top is set but the middle still jiggles, bake 3 more minutes and check again.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 28 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
