What You Need

Before You Start

Pat the sirloin dry and season it, shred the cabbage and carrot, grate the ginger and mince the garlic, and have the cooked rice ready.

How To Make It
  1. Sear the beef sirloin in a hot pan over medium high heat, 3 to 4 minutes a side, until deeply browned and it reaches 145°F in the center.

  2. Move the beef to a plate and rest 3 minutes, then slice it thin.
  3. In the same pan, cook the cabbage and carrot over medium heat 4 to 5 minutes, until wilted and just tender.
  4. Add the spinach and cook 1 to 2 minutes, until wilted.
  5. Toss the vegetables with the coconut aminos, sesame oil, garlic, ginger, and sesame seeds off the heat so the garlic stays sweet.
  6. Serve the sliced beef and vegetables over the rice.
Fix It: If the beef is tough, make sure you slice it against the grain, since cutting across the fibers is what keeps each bite tender.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
