Before You Start

Pull the sirloin out 10 minutes ahead and pat it dry, cut the broccoli into florets, rinse the spinach, mince the garlic, and dice the tomato.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Season the sirloin, add it, and sear, turning once, 3 to 4 minutes per side, until deep brown and it reaches 145°F in the center, then rest it 3 minutes.

  3. Cook the broccoli in the same pan, 5 to 6 minutes, until bright green and fork tender.
  4. Add the garlic and diced tomato and simmer 3 to 4 minutes, until the tomato breaks down and smells sweet.
  5. Add the spinach and cook 1 to 2 minutes, until just wilted, then fold in the basil off the heat.
  6. Slice the rested sirloin and serve it with the vegetables over the cooked rice.
Fix It: If the outside browns before it reaches 145°F, lower the heat and give it another minute so the center catches up.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
