Before You Start

Slice the pork thin and have every vegetable ready; a stir fry moves fast.

How To Make It
  1. Warm the sesame oil in a skillet over high heat, about 1 minute, until it shimmers.
  2. Add the pork in one layer and sear 2 minutes a side, until browned and it reaches 145°F; move it to a plate.

  3. Add the carrot and mushrooms and cook 3 minutes, then the snap peas for 2 minutes more, until bright and crisp tender.
  4. Add the ginger, garlic and coconut aminos and the pork back in and toss 1 minute, until glossy.
  5. Serve over the brown rice.
Fix It: Pork tough? It cooked too long; next time pull it at 145°F and let the sauce finish it.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
