What You Need
Makes 1 plate Batch it

Before You Start

Dry the steak well with paper towels for a deep sear.

How To Make It
  1. Season the steak with the salt and pepper.
  2. Warm the oil in a heavy skillet over high heat for 2 minutes, then sear the steak 4 minutes per side until deep brown and it reads 145°F; rest it 5 minutes.

  3. Lower the heat to medium and cook the mushrooms 6 minutes until browned.
  4. Add the garlic and spinach and cook 2 minutes until wilted, then stir in the cream cheese until creamy.
  5. Slice the steak over the vegetables.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
