What You Need

Before You Start

Spread everything in one layer with space between pieces so it roasts, not steams.

How To Make It
  1. Heat the oven to 425°F.
  2. Toss the chicken, zucchini and mushrooms with the oil, cumin, paprika, oregano, garlic and salt on a sheet pan.
  3. Roast 22 to 25 minutes until the chicken reads 165°F and the vegetables are browned.

  4. Squeeze the lime over the pan.
  5. Top with the cilantro.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the cilantro separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the zucchini softens before the mushrooms brown, cut the zucchini thicker next time.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
