What You Need
Makes 1 plate Batch it

Before You Start

Cut the chicken into even 1-inch cubes so every piece is done at the same time.

How To Make It
  1. Heat the oven to 425°F.
  2. Toss the chicken, zucchini and mushrooms with the oil, oregano, half the garlic, the lemon and salt on a sheet pan.
  3. Roast 20 to 22 minutes until the chicken reads 165°F and the vegetables are browned at the edges.

  4. Stir the mint into the yogurt.
  5. Spoon the yogurt sauce beside the chicken.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the yogurt sauce separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the chicken is done before the vegetables brown, move it off and roast the pan 5 more minutes.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
