7 oz flank steak seared and tossed with fresh ginger and garlic, 1/2 cup broccoli and 1.5 cups mushrooms, with rice vinegar and a scallion.

What You Need
Makes 1 plate Batch it

Before You Start

Slice the steak across the grain into thin strips so it stays tender.

How To Make It
  1. Heat the olive oil in a large skillet over high heat for 2 minutes until it shimmers.
  2. Sear the steak in one layer 2 minutes per side until browned and it reads 145°F, then move it to a plate and rest it 3 minutes.

  3. Stir-fry the mushrooms and broccoli 5 minutes until the broccoli is bright and tender-crisp.
  4. Add the ginger, garlic and salt and cook 30 seconds until fragrant.
  5. Return the beef with the vinegar and sesame oil and toss 1 minute until glossy, then top with the scallion.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the scallion separate, refrigerate up to 3 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the broccoli is still hard, add 2 tablespoons water and cover 1 minute to steam it.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
