What You Need
Makes 1 plate Batch it

Before You Start

Make the sauce first so the garlic mellows in the vinegar while the steak cooks.

How To Make It
  1. Make the sauce: stir the parsley, oregano, garlic, vinegar and 1 tablespoon of the oil together and set it aside.
  2. Heat the grill or a grill pan over medium-high heat for 5 minutes.
  3. Season the steak with the salt and pepper and grill 5 minutes per side until it reads 145°F; rest it 5 minutes.

  4. Brush the zucchini and mushrooms with the rest of the oil and grill 3 minutes per side until charred and tender.
  5. Slice the steak across the grain and spoon the sauce over it.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the parsley garlic sauce separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the steak is chewy, slice it thinner and straight across the grain.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
