Before You Start

Shred the cabbage thin so it cooks as fast as the pork.

How To Make It
  1. Brown the pork in a large skillet over medium-high heat for 7 minutes, breaking it up, until no pink remains and it reads 160°F.
    160°F
  2. Spoon off the fat, then add the ginger, garlic and salt and cook 1 minute until fragrant.
  3. Add the cabbage and cook 5 minutes until tender, then add the spinach for 1 minute until wilted.
  4. Stir in the vinegar and sesame oil and cook 1 minute until glossy.
  5. Top with the scallion.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the scallion separate, refrigerate up to 3 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.
    165°F
Fix It: If the pork releases a lot of fat, spoon it off twice; the cabbage will taste cleaner.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
