4 eggs baked over 2 oz browned turkey, 1 cup spinach and 1 cup mushrooms in 1/4 cup tomato, with 2 tablespoons feta and oregano.

What You Need
Makes 1 plate Batch it

Before You Start

Crack each egg into a cup first so a broken yolk does not land in the pan.

How To Make It
  1. Heat the oven to 375°F.
  2. Warm the oil in an oven-safe skillet over medium-high heat and brown the turkey 5 minutes until no pink remains and it reads 165°F; spoon off any fat.

  3. Add the mushrooms and garlic and cook 5 minutes until browned, then stir in the spinach, tomato and oregano for 2 minutes until wilted.
  4. Make 4 wells, crack in the eggs and scatter the feta.
  5. Bake 12 to 14 minutes until the whites and yolks are firm and the eggs read 160°F.

  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 3 days, then reheat it covered for 1 to 2 minutes until steaming and 165°F in the center.

Fix It: If the whites are set but the yolks are soft, bake 2 more minutes until firm for keeping.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 26 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
