What You Need

Before You Start

Bake or microwave the sweet potato ahead so it mashes warm and smooth.

How To Make It
  1. Preheat the oven to 350°F.
  2. Whisk the mashed sweet potato, eggs, milk, cinnamon, nutmeg, and vanilla until smooth.
  3. Pour into 2 small oven-safe cups set in a baking dish.
  4. Bake 22 to 25 minutes, until the centers are set and only wobble a little when you shake the dish.
  5. Cool 10 minutes and top each cup with a spoon of greek yogurt.
Fix It: If the tops crack, they baked a few minutes long; pull them as soon as the center sets.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
