What You Need

Before You Start

Use spotted, very ripe bananas; they do all the sweetening.

How To Make It
  1. Preheat the oven to 350°F and line a small loaf pan with parchment.
  2. Blend the oats into flour, about 30 seconds.
  3. Whisk the mashed bananas, eggs, and greek yogurt, then stir in the oat flour, baking powder, cinnamon, and walnuts.
  4. Spread into the pan and bake 30 to 35 minutes, until golden and a toothpick comes out clean.
  5. Cool 15 minutes before slicing.
Fix It: If the top browns before the center sets, lay foil over it for the last 10 minutes.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 30 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
